Avoid caster sugar – its fine crystals are ideal for creating a fine crumb in baking, but in marmalade making you want larger crystals that will dissolve slowly. The tin will collect any drips – and there are sure to be some, no matter how carefully you try to fill the jars. I was really struggling with marmalade-making but came across this recipe about 5 years ago and haven’t looked back.

This makes about 7-8 400g jars but your jars will probably be all shapes and sizes and the quantity always turns out different depending how long you boil the marmalade so make sure you have slightly more than you need.Wash 8 x 450g/1lb jars (or the equivalent volume larger or smaller jars) in hot, soapy water, then leave in a low oven to dry completely.
