The Dingle Whiskey Distillery was crafted and conceived by three independent spirits: Oliver Hughes; Liam LaHart and Peter Mosley were the three men behind the first independent Irish distillery for 150 years. This is both frustrating for us (as it's our favourite) and a strong testament to how great the gin is! The sixth release was aged exclusively in tawny port casks, which gives the whiskey more depth and sweetness.

Perhaps to an extent it is, but more importantly, it works - a worthwhile experiment that's produced a unique and interesting Irish whiskey.This adds a complex and refreshing flavour to the gin and brings out the natural flavours of the botanicals which include juniper, cassia, liquorice root, coriander and cinnamon bark. It stands out from others in the Hayman’s collection due to the intensity of the botanicals within and the addition of sugar for sweetness. The uniquely Irish botanicals give a fresh, floral character that perfectly balances the traditional juniper with hints of sweet citrus notes. The spirit is collected at 70% abv and then cut to 40% abv using the purest of water which they draw from our own well, 240 feet below the distillery.
