To this day we still make our Beer Cheese to Ken’s original recipe, adding extra strong ale and a secret blend of spices to mature Somerset Cheddar. I began playing with the addition by creating a “tea” with the herbs to figure out how strong the separate flavors would be.Since I knew how much wormwood would be palatable (about 1/2 tsp), the trick would be balancing the licorice spices with the wormwood. When I finally mustered up my courage to open it two weeks later, I was met with a brown and nicely carbonated brew that scarcely a sip of made it past my tongue. In a pilot project, we brewed a saison with lavender notes and compared it with a saison for which we had infused barley with lavender.
