K. 2023 boasts the most pounds of vanilla per gallon of beer we have ever released, yet showcases an endless depth, complexity and integration by allowing the time and barrel selection to direct the final experience without becoming sugary sweet or confectionery.

The palate has the delicious sumptuousness of white-fleshed fruits (pear, peach, apple), the alluring caress of fine bubbles and the soft vivacity of citrus fruit and nuances of gooseberry. Mango, orange, and sweet grapefruit are predominant in the aroma with hints of pineapple and blended tropical fruit juice. So, back in March of 2020, we brewed up a special batch that would be laid to rest in freshly emptied 19 year Elijah Craig barrels. We have brewed 15 different stout recipes, aged them in a variety of barrels, and then always thoughtfully selected and blended to achieve our goals, whether it be Beer : Barrel : Time, a new blend of Derivation or the Barrel-Aged Stouts by Shared Brewing. With these rare barrels from our friends at Heaven Hill we believe this is one of the finest beers we have ever produced.

The crew here at Tree House tastes “chocolate covered maple candy”, “vanilla”, “chocolate cake”, “brown sugar”, and “fresh roasted coffee”.Brian (formerly of Goose Island), Tommy (formerly of Perennial) and Cory tasted through more than 50 of our bourbon and whiskey barrels in an attempt to craft the blend. Bourbon County Double Barrel Stout has a depth and flavor that can only be achieved through time, patience, and partnership. The much older threads consist of the exact same brew/barrels from the 2020 release, barrels which we held back and allowed an extended aging.

This batch hit all its numbers and was then racked to our first Van Winkle barrels – this beer represents a blend of the first BBT from single-source distillery barrels.

After nearly two years in barrels, the blend was conditioned on more than 3 lbs/gallon of toasted coconut flakes and raw coconut chips, then finished with toasted hazelnut.

Similar to the experimental and boundary-pushing nature of the aircraft, SR-71 is an experimental outlet to test processes and recipe design. We brewed this Rye Imperial Stout with a higher hopping rate for the rye and hops to play together, to offer a snappy backbone to the aging and decadent adjuncts we had planned on infusing this massive stout with. This natural millésime beer is a blend of young lambics that have been aged for another 12 months in 40 year old Oloroso and PX sherry casks. This blend comprises 30-40% pinot noir, 30-40% meunier and 20-30% chardonnay grapes – harvested from the most extensive estate in the region – providing the champagne with body, suppleness and finesse. Elegant and harmonious, the pale yellow liquid with green hints, the stylish yet familiar bottle never fails to impress.Prepare your palate for the delectable flavors of milk chocolate and fudge, laced with caramel undertones and a warming finish of bourbon and apple brandy.
