About this deal

A sous vide machine uses a heated metal coil to warm water to a precise temperature with circulation. Once the sous vide machine is attached to any water-filled pot, you'll set the desired time and temperature, clip your bag of food to the side of the pot and wait for the delicious results. Because you're cooking at one constant temperature, a sous vide will take longer than preparing food on a grill or pan. The benefit of cooking your food at a constant temperature is that you'll never have to worry about overcooking anything and everything is cooked evenly. What does Sous Vide mean?

Seasoning a steak prior to vacuum sealing it then letting it rest in the bag can result in meat that has a firm texture similar to a mildly cured ham. Some folks find this texture off-putting, though I personally don't mind it. To avoid this texture, it's best to season and bag a steak immediately before cooking, or after cooking sous-vide and before searing. Chefman Sous Vide Circulator: This model is incredibly loud, and its motor jostles water around violently, all while the circulator struggles to reach high temperatures. It's true that given a high enough temperature (130°F or higher) and a long enough time period (several hours), the contents of a sealed sous-vide bag should be close to sterile, which means that rapid chilling via an ice bath followed by rapid reheating should pose no health risks, though I still strongly recommend against it whenever avoidable: it's not doing any favors for the quality of your steak.Gramercy Kitchen Sous Vide Immersion Circulator: This immersion circulator also gave inaccurate temperature readings and was unable to reach 190°F (88°C) during testing. It also appears to now be discontinued.

Sous vide machines, once associated with professional chefs, are gaining popularity with home cooks thanks to their small size and promise of precise, hands-free cooking. These devices — also known as sous vide cookers and immersion circulators — work by heating a water bath to the desired temperature and then maintaining that temperature so the water can gently cook sealed and submerged foods to your ideal doneness. They make it easier to avoid over- or under-cooking food, which is great news for both pricier cuts of meat you don't want to ruin as well as cheaper cuts because the low-and-slow cooking gives the tougher meats a chance to break down and get tender and delicious. The sous vide circulator. This is the heart of the system, and there are a wide range of models available—even some equipped with Bluetooth. In theory, you could sous vide on the stovetop with a pot of water, using a candy thermometer to monitor the water temperature. You'd have to make ongoing micro-adjustments to the heat to keep the water at a constant temperature, however, which might be more trouble than it's worth. In the Anova Precision™ Oven, you can replicate that environment by turning on sous vide mode and setting the steam to 100%. The oven will maintain whatever cooking temperature you set and raise the relative humidity inside the oven to 100%. Remove the steak from the bag and place it on a paper towel-lined plate. Pat it dry very carefully on both sides. Rub gently with canola, vegetable, or rice bran oil. If you did not season before bagging the steak, season it now generously with salt and pepper. Essential equipment for Sous Vide CookingGourmia Digital Sous Vide Machine, Wancle Sous Vide Cooker, and Kitchen Gizmo Sous Vide Immersion Cooker: These models all suffer from poor design features and controls that make them frustrating to operate. The motor on the Kitchen Gizmo circulator was so weak that it was hard to tell if it was actually circulating any water while in use. The ChefSteps Joule stands out from other brands because it's half the size of other sous vide machines and can conveniently fit in your kitchen drawer. Despite its size, the Joule is quite powerful, offering 1100 watts of power for ultra-fast water heating and the precisely desired temperature. For best results, I don't recommend cooking any longer than the maximum recommended time for each cut and temperature range. Should I add butter, oil, or any other liquid or fat to the sous-vide bag? Breville PolyScience HydroPro Sous Vide: This machine is powerful but expensive. At over twice the price of our overall winner, it’s difficult to recommend this immersion circulator for the average home user, even if it did perform well. For plenty of food, cooking in a wet sous vide environment is ideal. Meats and vegetables turn out perfectly and evenly cooked, and if you want to sear them after cooking, you can pat them dry before finishing over high heat. But for some foods, particularly foods with skin, the wet sous vide environment is not ideal. Perhaps you’ve experienced the rubbery skin produced by cooking poultry in a sous vide bag, for instance. Once waterlogged, it’s an uphill battle to get that skin crispy.
