Simple syrup: Store bought simple syrup is easiest, but it's super easy to make from scratch, too. Combine equal parts water and sugar (we typically use ½ cup of each) in a small saucepan over medium heat. Bring to a low simmer and stir until the sugar is dissolved. Remove from heat and let cool before using. To make this a sugar-free passion fruit martini, omit the liqueur or sweetened passion fruit juice. Use 2 extra ounces of the puree and an extra 1/2 to 1 ounce of sugar-free vanilla simple syrup instead. Adjust the sweetener to your tastes. While stumbling across the idea for a passion fruit martini (which are quite popular by the way!)
