About this deal

The 30 Year Old New American Oak Cask is one of the last of ten releases within The Causeway Collection across nine markets for 2020. First matured for 14 years in oloroso sherry butts and bourbon barrels, Bushmills have added deeper waves of flavour by finishing this single malt in new American oak casks for an unprecedented 16 years. Non chill-filtered and bottled in September 2020 at cask strength, it is imbued with key notes of honeyed malt while the virgin oak imparts intense flavours of vanilla, chocolate and warm wood. These expressions also just highlight to me how well Bushmills spirit goes with fortified wine casks. Bushmills solely done in bourbon casks even at cask strength never really got my juices flowing but show them some sherry, madeira, port or malaga wine and it bursts into life.

Bushmills Irish Whiskey has today unveiled the fourth series of its prestigious Causeway Collection from the world's oldest licenced whiskey distillery, on Ireland's rugged north Antrim coast. This 27-Year-Old Bourbon Cask is a really special single malt. Maturing it for 21 years in first-fill bourbon barrels gives our single malt beautifully intense vanilla notes that evolve into creamy crème brûlée over time, complemented by gentle waves of cinnamon spice. It’s truly a sensational whiskey that stands with the best of Irish single malt, a giant in its own right. Helen has since gone on to be the first woman inducted into the Whisky Magazine Hall of Fame and, last month, was awarded a Chairman’s Award by Drinks Ireland/Irish Whiskey Association for her contribution to the development of the Irish whiskey industry and category. The ground-breaking Causeway Collection is a unique selection of cask-finished and fully matured Irish single malt whiskeys from The Old Bushmills Distillery. This year’s collection, the third in the series, is the first to be unveiled by Bushmills Master Blender, Alex Thomas. The Bushmills 2022 Causeway Collection references vary in age from 9 to 33 years old, are all non-chill filtered and range in price from from €90 to €1200.

Palate: The palate follows the nose very well - liquid christmas pudding comes to mind. All those dark fruit notes of dates and raisins along with stem ginger, toasted hazelnuts and boozy sherry with sweet cake batter marry together. Frangipane also. This is underpinned by the Bushmills signature notes of bananas, peach and tropical fruit. Water brings out more syrupy sweetness from the Malaga casks along with spicy wood notes but again body wise the whiskey suffers.

The 1995 Marsala Cask has matured for over 10 years in oloroso sherry butts and bourbon barrels, before being aged in rare Marsala casks sourced from the island of Sicily for 15 years. Having been soaked deeply into the oak grain, this dark sweet Italian wine imparts succulent spiced fruit notes and a brown sugar sweetness. These references are part of the 2023 release, the fourth, of the prestigious Causeway Collection from the world’s oldest licenced whiskey distillery. Curated and selected by Bushmills’ visionary Master Blender, Alex Thomas, it features nine rare cask-finished Irish single malts boasting unprecedented finishing in diverse, rare and unique casks from across the globe. Sensationally smooth and sweet, with vanilla and chocolate interweaving on the tongue, and a warming spiced coconut. Then the gentle wood note reappears, to remind us of its 30 patient years spent sleeping in oak casks. Here, it’s the hands of 3rd and 4th generation Coopers that hold things together, who risk splinter and hammer blow to bung a barrel. With a touch they understand the swirls in the grain of a white oak. Amongst all the iron hoops and mild steel, there is something more solid that solders these kin to this atelier.

Nose: Harmonious - rich, sweet and woody. Very fruity - bananas foster and french toast. Cinnamon, caramelised brown sugar and vanilla ice cream. Now the tropical fruit notes of pineapple, mangos and fresh apricots. A definite cherry note too with a hint of eucalyptus. Dark chocolate with dried fruit and orange zest. Water brings out a little more nuttiness - crushed walnuts with marzipan making an appearance too. Palate: Vibrant even after 28 years. Sweet malt then all the tropical notes from the nose with some banana thrown in for good measure. Stem ginger syrup, pink peppercorns and cardamom. Vanilla syrup infused mocha.
