Vegetables are the perfect side dish to accompany fish fingers. They add a burst of color to the plate and provide an array of nutrients that can make any meal feel like a well-rounded feast. As the saying goes, vegetables are the 'icing on the cake' when it comes to adding flavor and texture to your meal. I'm David Greene with a story about fish fingers. No, this is not a cooking segment. NPR's Joe Palca doesn't do cooking stories for his series Joe's Big Idea, but he does do stories about genetics and evolution. And today Joe tells about research unveiling the evolutionary similarity between fish fins and mouse fingers. A potato salad is such a lovely side dish for fish fingers, particularly in the warmer summer months. You can serve it warm, or if you’re trying to prep dishes in advance to save a little time, you can just make it the night before and keep it in the fridge.

I like to add plenty of vinegar when serving fish fingers with mushy peas, and a little sprinkling of sea salt! Veggie rice is a wonderful way to use up any leftovers you have in the fridge, including carrots, peppers, mushrooms, sweetcorn, and peas. A fish finger sandwich can be a real joy, and it’s likely that you’re most accustomed to a couple of slices of white.There are several side dishes that go well with fish fingers. Chips, or French fries as they're known in the US, are a classic accompaniment. They can be served with a variety of sauces and seasonings to customize the flavor. Mashed potatoes are also a great choice for those who want something a bit more filling. Roasted or boiled vegetables such as carrots, broccoli, and peppers offer a healthier option. All of these sides pair well with tartar sauce or any other condiment of your choosing. I really enjoy making a potato salad by mixing mayo and horseradish sauce to make a dressing, and then adding chopped red onion and chives for decoration. From these finds, it now appears that the four legs common to land animals today really evolved for another purpose: navigating swampy wetlands, not as a means of moving to land. But once on land, the animals found their limbs a survival advantage there, too. Evolution frequently produces adaptations that come to be useful in the future for a different purpose. Cook the fish fingers as you wish, I like to air fry mine because they come out crispier. I cook them at 200°C or 400°F for 10-12 minutes. You could fry them in ghee, grill them or bake them in the oven too.
