About this deal

Pre Heat your oven to 180 degrees C and grease a large rectangle baking dish (a large lasagne dish is perfect!).

You can use a mandolin or the slicer attachment on your food processor to cut the potatoes. Or use a sharp knife (and a lot of patience) to cut them by hand. SUCH A CLASSY DISH! You can sound all fancy when you tell your guests (or family!) this is a traditional French dish called boulangere potatoes. You’ll need a medium baking dish to cook the Potato Bake in. I use a pyrex casserole dish with a lid. Whilst rosemary is the traditional herb to use, thyme, sage or oregano are also wonderful additions. In a large saute pan heat the remaining 4 tablespoons of butter with 2 tablespoons of olive oil Saute your sliced onions for 5 minutes.In rural areas where people did not have their own ovens, the dish was traditionally cooked by bakers. But to get it right, keep my top tips in mind (and, ideally, read through this entire post before you get to the recipe card):

Allrounder or floury potatoesare perfect for this Pommes Boulangere dish. The potato & onion bake would slip and slide apart when you serve if you use waxy potatoes. Spread a layer on sauteed onion over the potatoes and sprinkle with rosemary, salt and pepper. Continue layering in this way, ending with a layer of potatoes. You want a good allrounder potato for this dish. Too waxy and the potato bake will slip and slide apart when you serve. Too floury and the potatoes will disintegrate whilst cooked. Potatoes: The best potatoes for the perfect pommes boulangere are King Edwards, Yukon Gold, Russet, Maris Piper and Desiree potatoes.
