Edradour 10yo 1994/2004 (46%, Signatory Unchillfiltered Collection, D. 9/8/'94, B. 20/10/'04, C#349, 783 Bts.) Nose: Pleasant but not terribly expressive. There is fun to be had, but it stays very subtle. Fairly sweet. With a splash of water some more flowery aroma's emerged, together with some very faint toilet freshener. Taste: Ough! Very strange at the start. Soap. Molasses & Mint. Eucalyptus? Malty. Slightly oily. Old vomit. No partnership, joint venture, agency, or employment relationship is created as a result of your use of the Service.probably one of the first examples of what is now a pretty common feature in Scotland. Edradour has After a minute some subtle spices emerge. A nicely balanced profile; identifiable as a finish, but it works well. Cask Strength 21 Year Old Oloroso (Sherry matured for 21 years solely in a first fill Oloroso Sherry Butt) (58%ABV) Edradour whiskies vary in style, but usually have sherry finishes and a robust profile. Their flagship 10 year old expression, from their core range, is matured in ex-Oloroso and ex-bourbon casks, resulting in notes of fruit, spice and nuts. Conversely, the Edradour Ballechin 10 Year Old is a heavily peated bottling from their Discovery Range; a range that experiments with different casks, including wine. Since its formation the company has built extensive warehousing at the distillery in which to store Signatory’s casks, as well as a bottling line and tasting room.

Palate: Spicy Christmas cake, sweet golden syrup with a touch of honeyed almonds. A distinctive, old fashioned, rich mouth feel coming from the small copper farm stills Edradour 10 Years is the flagship malt for the Edradour distillery owned by Andrew Symington who also owns the Signatory Vintage bottling company as well. In addition to their standard Edradour releases they also put out a peated whisky under the Ballechin line which isn’t a totally uncommon practice. Tobermory does the same thing and releases their peated whisky as Ledaig. ive been a fan of edradour for a long time. its different to most in that its worm tubbed, and that can cause a marmite moment for some. Seductively smooth yet earthy, with hints of vanilla or toffee, similar to nut brittle. Its dark, dried fruits help to provide a profound, mature sweetness of sherry.Records the default button state of the corresponding category & the status of CCPA. It works only in coordination with the primary cookie. The accent moves further towards smoke and tar later on. The sweetness lingers in the finish for a long time. The square footage of the distillery buildings? Surface of the distillery grounds? Or maybe its annual output?

The whiskies are sorted by series: ‘ The Classic Range‘, ‘ The Cask Strength Series‘, ‘ The Wine Finishes‘ and ‘ The Wine Matured’. These are joined by the range of peated ‘ Ballechin‘ whiskies.Initially I was thinking of a score in the lower 60's, but after half an hour it becomes notably more complex. Taste: Sweet start - but it's sharp and alcoholic. No balance between the various elements. A little watery. The ten year old Edradour is handmade and one of the last Single Malt Whiskies from a traditional farm distillery still in production today. The methods of production remain virtually unchanged in the last 150 years and are only just capable of commercial quantities. Indeed Edradour Distillery makes as much whisky in a year as most distilleries produce in a week. A rare pleasure for a fortunate few. Taste: Once again a bit of an odd taste. A chemical fruitiness like the last one. Very, very woody in the finish.

I toured the distillery with my parents and a lovely Australian family. Our tour guide very fun and knowledgeable about Edradour's history and the distillation process. The grounds are very picturesque. It looks like something out of an old movie. Nice to tour a facility that is not a factory but focused on small batch well crafted products. During this ageing process the whisky is regularly monitored with the same hands-on care and attention that it took to produce it. The output of the two pot stills is only about 125,000 litres per year, about the amount that a typical Speyside distillery would produce in a week. Taste: Solid, sweet and fruity start. Big centre. Dry, cool and a tad metallic in the finish. Some nice tannins.Toasted nuts, brown sugar, oatmeal-like grain, fruity custard and light bits of toffee, earth and char. Dusty. Interesting development; very sour after 10 minutes. Later on more smoke emerges - and more soap.
