Aged longer than most Manzanilla, Solear is made from 100% Palomino, from vines grown in the unique, chalk and lime rich 'albariza' soil of Barbadillo's 500 hectare Gibalbin and Santa Lucia vineyards in the Jerez Superior winemaking region in southern Spain. Cream sherries, which are some of the sweetest, are also viscous and are known for having a creamy mouthfeel, which is how they get their name.Aged for a minimum of 20 years and from one of the best producers, a complex, full-bodied, nutty and dried fruit richness prevails here, undercut with a citrus freshness and a firm dry finish. It is unique in its production style, as it is made from Palomino Fino grapes and fermented and aged under a layer of flor (a layer of yeast that grows on the surface of the wine) in barrels made of white oak.
