Draw a half a gingerbread man– make sure the “outside (ie the arm and leg)” of the gingerbread man is on the side that “flaps open” and also that it goes right to the edge – you will need a straight edge there so the gingerbread men do not fall apart, a bit like a Paper Doll Chain. After preparing the dough you roll it out flat and cut the gingerbread man with cookie cutters. I used a Swann Morton blade to make two cuts on the body of the gingerbread man. This was just large enough to hold a candy cane in place and the foam meant the gingerbread man was flexible enough (I found card ripped when the candy cane was pushed through).
