The travelling over, it is the day of the Mums Know Best recipe fair where foodie folk come together to swap recipes and talk about the stories behind them. The three 'star mums' share their recipes with an eager public while volunteers take part in a culinary skills challenge. This time, Gerard Baker shows how to make a hand-raised pie. The day ends with the Mums Know Best banquet, an eclectic meal featuring all the dishes from their journey. Heat 2 tablespoons of the oil in a large frying pan. Brown the oxtail over a medium heat for about 10 minutes, turning every now and then, until dark brown all over. You may need to add extra oil if the pan looks dry at any point during the browning step. Put the browned oxtail into a flameproof casserole dish. (You may need to do this in batches.)

Mix the butter, parsley, garlic, spring onions and grated cheese in a bowl. Divide this stuffing into four and form each portion into a sausage shape. Set aside. This beautiful cookbook brings together over 100 of the nation's favourite recipes from the second series of BBC2's MUMS KNOW BEST. It includes Si and Dave's personal family recipes as well as their favourite recipes that they discover through the mums they meet and the recipe fairs they hold. Episodes include Comforting Food, High Tea, School Dinners and Al Fresco. Each week's Recipe Fair has a different theme such as Sunday Dinners, Show Off Dinners, Picnics, Birthday Parties, Family Favourites and Good Simple Suppers, and all the recipes fit into that theme. At the heart of each is the Mums Know Best Banquet, catered by three ''VIP Mums' who showcase a great family recipe that needs to be shared with the nation. But it's also a call to arms; the series aims to bring together grannies, mums and daughters who love to cook, to ensure that these precious historical documents of our shared national cuisine are preserved for the future.
