Here’s the frustrating reality about cooking beans from scratch: You’ll never know exactly how long they’ll take to cook. Sometimes, very old beans will never soften sufficiently. Often, currant leaves are not dried in the air, but using an electric dryer. This speeds up the process. It is interesting! In more than 2 decades of cooking dried beans, I feel extremely confident in saying that it's best to season them before cooking.
